If you have been following any of my home renovation posts you will know that it is a big job. No wait a BIG job, now that I have capitalized the word big I feel you get a better idea of just how much work there is to do. When I showed you the before images of the kitchen you may have noticed a wonderful huge oven that I was going to clean up and get the doors powder coated with a new colour. Well the best laid plans as they say. I sat down and used every horrid chemical I could find to scrub the cooker and to my disgust found leftover chicken that had been there for at least a year! I know disgusting right. I powered through and discovered that only the hob works and none of the four ovens! So I have been without an oven for 6 weeks now and am coping just fine whilst we save for a new one, (along with every other bit of endless building work).
At first I was pretty grumpy but you can actually there is a lot you can do on the hob, even roasting. Armed with my griddle pan, I love my griddle pan so much and I picked it up for 6€ at a street market near my apartment in Paris.
you will need;
- 1 red chili
- 8 cherry tomatoes
- 4 cloves of garlic
- 2tbsp chopped fresh coriander
- chopped chives to garnish
- Heat the griddle pan or a heavy bottomed frying pan. Place the garlic, tomatoes and chili onto the pan and cook and turn them until they are chard on all sides. This will happen at different times. You want all of the ingredients to be cooked through and soft.
- Smash all of the cooked ingredients with a pestle and mortar. Add the fresh coriander and serve.
