I hate when people think that salad means a bit of lettuce and a few tomatoes, whilst I love those things salads are so much more interesting - or at least they can be. This recipe is inspired by a Maltese dish called Fażola bit-Tewm but I changed it, because that is what I do.
you will need;
425g can butter beans
1 cup flat leaf parsley
4 spring onions
1/2 cup chopped fresh coriander
3 cloves garlic
6tbsp olive oil
- Chop your fresh herbs.
- Finely slice the spring onions.
- Crush the garlic cloves and lightly fry the garlic cloves in 1tbsp olive oil. Add the spring onions and remove from the heat.
- Mix the fried ingredients in with the butter beans, the rest of the oil and herbs.
- Season as required.
