I served it on pasta but it could be used on many things. Drizzled on a steak sandwich, a salad, a veggie burger or BBQ corn on the cob, it is really versatile.
you will need;
200g cherry tomatoes (I used a mixed variety but you don't have to)
1 dessertspoon capers
2tbsp freshly chopped flat leaf parsley
1 large garlic clove
1tbsp lime juice
olive oil (approximately 1/2 cup)
salt & pepper
- This is how fast it is. Place all of the ingredients in a food processor. Turn on a medium/slow speed.
- Slowly drizzle the olive oil in whilst the processor is running, enough to make a nice sauce, about 1/2 a cup.
- Now you are done.
