Spicy Carrot Dip

 I love to entertain but I also love to eat snacks, I know snacking is bad stick to your meals but sometimes I just have to/want to interpret it as you will. I feel less guilt if I eat a homemade snack. In fact if I eat a super healthy snack like this packed full of carrots then I feel it was my duty to snack and fill myself with an extra daily allowance of goodness. You see with a little imagination and some kitchen time you can turn a negative into a positive.

you will need;

1lb Carrots, peeled & chopped into chunks
1/2tsp cumin seeds
1tsp sumac 
1/2 cup olive oil
1tsp chilli powder
1tsp coriander seeds
1/2 inch root ginger, peeled & grated
salt and pepper 
method;
  1. Preheat oven to 200C. Roast the carrots with 2tbs of olive oil until soft.
  2. In a hot, dry frying pan toast the cumin and coriander seeds until they begin to pop.
  3. In a food processor place the cooked carrots, the remainder of the oil, toasted cumin and coriander, grated ginger, sumac, chilli powder and seasoning. Pulse until the mixture has become a thick paste and now your dip is ready.
  4. Serve warm or cold.
