No Need For Summer

There is no need to wait for summer to serve BBQ chicken, or a least chicken worthy of a BBQ but made in the oven. In fact whilst I am in Paris embracing apartment living there will be no alfresco cooking. I am no a firm believer that all chicken should first be brined. As I am vegetarian I have based this belief on the reviews of others, trust me when I say they have been good reviews. This is such a simple meal to prepare it would make a great mid-week supper. As a time starved new mummy I am embracing all things that offer me shower time.
you will need;

8 chicken thighs
1tbsp tomato puree
3tbsp honey
1tsp chilli powder
1tbsp soy sauce

method;
  1. Take the pre-brined chicken, learn to brine from this post  and place on a baking sheet.
  2. Mix all of the ingredients of the glaze into a bowl. 
  3. Brush a layer of glaze over the chicken and place into a preheated oven 200C.
  4. Cook the chicken for 30-40 minutes. Re-glaze the chicken every so often until you have used all of  your glaze.
I served the chicken with wild rice and peas.
