Rice Cakes & Bloody Mary Beans

 
This is a really great everyday meal and full of spice and flavour. It is really easy when you are busy to let weekday meals become repetitive and dull. Sometimes a simple way to avoid that is presenting your go to staples in a different way. This recipe comes in 2 parts the rice and the beans. First up the rice cakes.
 
you will need;
 
1 cup mixed rice (contains white, black and red rice, this will work with regular rice also)
100g feta
2 eggs
1tbsp flour
1tbsp freshly chopped chives
1tsp ground coriander
salt & pepper
oil for frying
 
method;
  1. Rinse and boil your rice & leave to cool a little.
  2. Once cooled crumble in the cheese, mix in the eggs, flour, herbs and spices and season with salt & pepper. Mix thoroughly.
  3. Preheat the oven to 200C
  4. Form into 4 burger shaped patties. Seal in a hot frying pan on both sides and transfer to a baking tray and bake in the oven for 20 - 25 mins.
Now for the bloody mary beans!
 
you will need;
 
400g tin haricot beans
400g tinned tomatoes
1tsp chilli powder
1tbsp freshly chopped coriander
2tbsp lemon juice
1 shot of vodka
 
method;
  1. Place all of the ingredients except the vodka into a saucepan. Fill the empty tomato jar with water and pour that into the saucepan also.
  2. Put the pan on a low heat and simmer the beans gently until you have created a thick sauce.
  3. Once the beans have cooked down add the shot of vodka and warm through. If you are cooking for kiddos you will want to cook the alcohol off.
