Coconut Macaroons

Christmas is over and the New Year is drawing in. If you are tired of baking and fed up of chocolate, (as unlikely as either of those things may be), here is a great sweet treat that you can whip up for a New Year party. Macaroons are not just the jewelled coloured almond dreams that have swept every shore from Paris, no in fact macaroons come in various forms and these coconut macaroons are far easier and quicker to prepare at a moments notice than their French cousins.
 
you will need;
 
300g desiccated coconut
2 egg whites
120mls condensed milk
 
method;
  1. Mix all of the ingredients up in a large bowl until the coconut is fully coated.
  2. Place heaped teaspoons of the mixture onto a baking tray lined with parchment.
  3. Bake in an oven at 200C until the tops of the macaroons are browned.
  4. Cool fully before serving.

  1. Just made this-delicious and so quick and easy! Had a bit of trouble with them sticking to the greaseproof paper though- any tips?HUGE congrats on baby's arrival. xxxxxx

      Thank you, the baby is the most perfect baby in the world. I am certain I am the first parent to think this but I can assure you it is true.

      Maybe you could try running a knife under them to plate them up when they are still slightly warm and you can fix any stuck bits whilst they are still gooey.
