Maple roasted vegetables

 
The weather has really started to turn, conkers are falling from the trees it is definitely time for hearty food. A great alternative to honey roasted vegetables is to use maple syrup. Sweet roasted vegetables are real cold weather favourite.
 
you will need;
 
2 carrots
2 red onions
200g celeriac
1 Parsnip
2tbsp maple syrup
1tbsp oil
salt and pepper
 
method;
  1. Peel and dice your vegetables and preheat your oven to 190C.
  2. Coat your vegetables with the oil and sprinkle with salt and pepper.
  3. Roast your vegetables. Before they are fully tender coat with the maple syrup and return the oven until the vegetables are tender and the syrup is thick and sticky.
