Sometimes this simple things in are best. Remember when I told you how great olives are for you in this post, well here is another simple way to enjoy them.
you will need;
150g green olives pitted
2 red chillies
1 bunch fresh basil
3tbsp olive oil
2 garlic cloves
salt and pepper
- Take the basil, garlic and chillies and grind into a paste with a pestle and mortar. You can use a food processor however I find that the flavours are better with the slow release gained from crushing them with the pestle as opposed to them just getting smooshed by the blades of a food processor.
- Once you have formed the paste add the olive oil and mix through the roughly chopped olives in with the paste. Leave these to marinade at least overnight.
- There is enough olive mixture for 4 people. All you have to do now is stir though the olives through the cooked pasta and serve.
