Tomato pasta & olives

 
Sometimes this simple things in are best. Remember when I told you how great olives are for you in this post, well here is another simple way to enjoy them.
 
you will need;
 
150g green olives pitted
2 red chillies
1 bunch fresh basil
3tbsp olive oil
2 garlic cloves
salt and pepper
pasta
 
method;
  1. Take the basil, garlic and chillies and grind into a paste with a pestle and mortar. You can use a food processor however I find that the flavours are better with the slow release gained from crushing them with the pestle as opposed to them just getting smooshed by the blades of a food processor.
  2. Once you have formed the paste add the olive oil and mix through the roughly chopped olives in with the paste. Leave these to marinade at least overnight.
  3. There is enough olive mixture for 4 people. All you have to do now is stir though the olives through the cooked pasta and serve.
