I do like pasta but sometimes I find the sauces that are popular here in the UK are a little heavy for me at times. There are days when I just want to eat something light and full of flavour. This recipe is not only light but it is packed full of goodness with watercress, well known super food and lemon, a great detox food.
you will need;
1 garlic clove
6tbsp olive oil
zest & juice of 1 lemon
salt & pepper
- Put a large pan of salted water on to boil and cook the pasta according to the packets instructions.
- Whilst the pasta is cooking take the capers, watercress, lemon juice and zest, garlic clove and olive oil into a food processor and blend until it creates a creamy sauce.
- Drain the pasta, stir through and serve. Season to taste.
