Carrot salad with orange dressing - recipe

 
Here we are with the second of my yummy detox recipes. One of the things I can't abide is boring salad. Carrots are extremely high in beta carotene which is an anti-oxidant which is great for detoxing. Oranges are also great for clearing toxins and are packed full of vitamin C to help you ward off any winter sniffles. To give the salad a little bit it also contains almonds and pumpkin seeds. Pumpkin seeds are source of zinc and magnesium which are great for the skin.

 
you will need;
 
2 large carrots
zest of one orange
juice of half an orange
1tsp Dijon mustard
2tbsp olive oil
dash balsamic vinegar
1tbsp flaked almonds
2tbsp pumpkin seeds
 
method;
  1. Grate your carrot into a bowl and mix with the seeds.
  2. In a lidded bottle or jar mix the mustard, oil, vinegar, zest and juice. Shake vigorously to make the dressing and pour over the salad.
