Broccoli Risoni - Recipe

 
Okay so you have a to do list that grows by 3 every time you are ready to tick one thing off you know the sort of week I mean well I have one of those months where I have been continually chasing my tail and never getting ahead. There is nothing better for those times than a great recipe that you can knock up in minutes and this is one of those. Plus have I ever told you that broccoli is one of my favourite vegetables well if I have I will tell you again because broccoli is awesome! I first bought Risoni pasta on a whim because it was small and cute but it has paid off for quick recipes as it takes no time to cook.

You will need;

1 1/2 cups Risoni/Orzo pasta
120g broccoli florets
200g soft cheese (such as Philadelphia)
2 garlic cloves
Salt and pepper
2tsp dried mixed herbs

Method;

  1. Boil your pasta according to the packets instructions and blanch the broccoli.
  2. Fry your garlic and then add the broccoli, pasta herbs and seasoning.
  3. Last but not least stir through the cream cheese and serve.
A great quick dish. My husband loves to douse everything in balsamic vinegar pictured below -  he is gong through a real balsamic phase.
