So far this marriage thing has been working out pretty well, I like to cook and Joe likes to ask me to cook things - everyone is a winner. I love to create new and different recipes however Joe likes the classics so he requested good old fashioned chocolate chip cookies. So I made him a batch for him to take into work, not before eating a few himself warm from the oven.
you will need;
350g plain flour
1 tsp baking powder
pinch of salt
150 g caster sugar
150g soft brown sugar
1 tsp vanilla extract
450g chocolate pieces (made up from white choc chips, milk choc chips and chopped dark chocolate)
- In a bowl mix the baking powder, salt and flour.
- In a separate bowl cream together the butter and sugar, add the egg & vanilla to this mix. When the mixture is fully combined start to add the flour slowly.
- Stir in the chocolate. Roll the dough into a sausage about 2inches in diameter. Wrap in cling film and leave in the fridge for at least 4 hours.
- When you are ready slice the cookies about 3/4 inch thick & bake in an oven preheated to 180c for about 10 mins.
